It's a sheep cheese produced in Sardinia which preserves the ancient and particular techniques of craftsmanship. The name is due to the use, until a short time ago, the chestnut wooden molds on the bottom of which was carved a flower, often accompanied by the initial manufacturer, which marchiava the faces of the forms.
It 'a hard cheese and raw dough, exclusively produced with whole sheep's milk, fresh and raw, coagulated with rennet paste lamb or kid. Forms, modeled with special molds and skill of the operators, have the characteristic appearance of the heel "of a mule's back," they are branded origin and, after a short stop in brine, subjected to light smoking and finally matured in cool cellars of Sardinia central.
The "protected designation of origin", better known by the acronym PDO (D.O.P.), is a brand of legal protection of the name which is given by the European Union to foods whose peculiar characteristics depend essentially or exclusively from the territory in which they were produced.
