Peretta is a spun, cows' milk cheese from the Sardinia. It is produced throughout the year, both artisanal and industrial, with milk from animals raised on pasture or in free stabling. The characteristic shape is a typical "pear" with a head, and has a golden, glossy, thin rind and a straw-coloured paste which is elastic and uniform, with a sweet and delicate flavour. It matures for 2-7 days and weighs between 500g and 800g.
